Sun-dried tomatoes, YUM!

I love seeing folks at the Redondo Beach Farmer's Market! We introduced our CoCoFir last week, and this week we will be introducing folks to CoCoFir Fauxmage - our nondairy coconut milk cheese! What? A cheese that is actually good for you gut - no inflammation!


Here’s this week’s idea -


Have you ever had sun-dried tomatoes?  Homemade?


Now that you have a stunning jar from muun chi, you may use it to make your very own sun-dried tomatoes that are out of this world!


First, after you visit muun chi, and buy your jar of yumminess, head over to visit the fresh tomatoes and buy


16 plum tomatoes or a a pound of cherry tomatoes


when you get home chop them into slivers, or chunks, whichever you prefer and bake at 225 degrees sprinkled with a little salt for 4-6 hours (if you have a dehydrator, this will preserve more of the nutrients)

After you have cooled your tomatoes,


add:


1T olive oil or more if needed

1 t salt

1 mashed date

1 t oregano

1 t rosemary

2 cloves of garlic sliced

a tsp of muun chi fermented orange peel


Pack into your muun chi jar, and refrigerate for days.  It should last for a month, but probably won’t…hehe. Enjoy them on your salads, or on your muun chi Fauxmage on a muun chi Bite while you sip your muun chi Kvass.

Good for your gut!  and our Earth will thank you for using your jar again!
